Cashew - Oat Waffles

This recipe is revised from the Dr. Diehl cookbook The Optimal Diet. It's a very good cookbook that i recommend to anyone that is on a low fat, low sodium, and a vegan diet. It was made for the CHIP program.

2-3 t. baking powder
1/3 c. raw cashews
1 c. water
1 c. soy milk
2 T. wheat germ
1 t. vanilla extract
1 t. olive oil
2 c. quick oats
1/2 t. salt
1 T. sugar or honey (optional)

1. blend cashews in water and soy or almond milk until smooth.
2. add remaining ingredients, blending together.
3. let mixture stand for a few minutes to thicken.
4. cook approximately 7 minutes hot in a waffle iron until golden brown. It depends on your waffle maker, so follow the manufacture's directions.

This recipe didn't have any baking powder in it, which had to be added and we didn't use the honey or sugar. We did add blueberry's one time and that turned out nicely.
