Cornbread

This is a recipe that I like to make every week that we eat with soup or with milk on it.

1 c. cornmeal (yellow preferably)
1 c. flour
1/4 c. sugar
1/2 t. salt
1 T. baking soda
1 c. almond milk
1 fake egg
1 T. oil
Preheat oven to 400 degrees F and lightly grease an 8x8 pan.
Mix the dry ingredients together and if you have the dry ingredient part of the egg, put that in too. Mix the water that the egg needs, the almond milk or water + soymilk powder and oil in a measuring cup and pour into the flour mixture, mixing with a whisk so there aren't any flour lumps.
Bake for 30 minutes on 400 degrees F.
Makes about 8 slices.
